If you have been following along on the blog, you have probably noticed how FOOD has been a constant discussion. As we have been engaged in our Health Challenge 2022, it has led to much more than just a discussion on weight loss (with me personally). I have truly embarked on discovering our health from the inside out, and what we put into our bodies is so very vital.
I have been reading books/articles, watching documentaries, and talking with experts in food. It has also led me to a commitment to stop putting “junk” in my body. We are learning about sugars, GMO’s, addictive chemicals, and more. I am both excited to learn all of this, and appalled at where we have come with our food.
I want this office to not only provide adjustments/chiropractic care, but I want it also to serve as a place for health education. I want to provide all of you ways to embark on your own health journey. The first thing I want to share with you are places where you can buy local, quality food, that you can trust.
The first farm I would like to introduce is Endless Knot Community Farm (www.ekcfarm.com). Willis and Isabelle Loftin are the founders of Endless Knot and not only are they amazing people, but they are also full of so much knowledge. My family and I got to spend a Saturday with them at the farm looking at everything, and learning so much. The Loftin’s are creating a regenerative farm. If you are unsure of what this means, the definition is, “Regenerative agriculture is a conservation and rehabilitation approach to food and farming systems. It focuses on topsoil regeneration, increasing biodiversity, improving the water cycle, enhancing ecosystem services, supporting biosequestration, increasing resilience to climate change, and strengthening the health and vitality of farm soil.”
The absolutely believe in the power of the land and creating a healthy lifestyle through they way we eat (and the way we live). They do not add any chemicals, etc. in their farming. Their mission is: We are Jesus following health nuts that are environmentally minded striving to grow nutrient dense food for people in a way that honors our creator, bringing health to the land, air and water as well as plants, animals and people.
As I have told you, my health challenge this year has been just that…. a challenge. I wish I could say it was just an easy diet, I lost a ton of weight, and now I am moving on. It is a far cry from that. I am still battling my weight, but I am taking the necessary steps to make my body healthy. I am working with my family to make smarter choice, and eat clean.
On our trip to the farm, we heard about the processes they use, and how they continue to learn best practices. We learned more about how a term like “organic” isn’t always what you think. We got to see everything… and the complete transparency was amazing (not what you expect these days from the food industry.)
We left that day with eggs, chicken, and pork chops and trust me when I say… it has all been delicious.
